I'm Way Behind on The Whole Soup Thing

 
 I'm a soup-newbie.  This is what I've been eating, and liking it!  (After it's cooked of course!)
(It's uncooked Campbell's Split Pea with Bacon)
  
I never really liked soup much until recently.  For some reason now I suddenly like soup.  A lot!  But I've missed out on almost 40 years of eating soup.  There's a whole new "soup world" out there, unexplored!  One soup that I have eaten in the past is New England Clam Chowder, but, I get that in restaurants, and when it's good it's awesome, when it's not very good, it's really disappointing.
  
There must be lots of great soups out there, even soup recipes!  Can you share with me your favorite soup, or soup recipe?  I'm way behind on the whole soup-eating thing!

  2. I'll get Bill's recipe for Hungarian noodle soup which is basically vegetable beef soup and angel hair pasta on the side, but it's good you might like it and of course he has to have what he calls hunky bread which I call Italian loaf bread, but you can't convince him of that.

  3. Carol: DH is a BIG fan of French Onion soup, I will check that out, I use Allrecipes.com all the time, that is a GREAT site.

    Jude! You won't believe this, but when your comment came in I was literally in the middle of researching my HUNGARIAN ancestors! I would LOVE to try Bill's recipe for Hungarian noodle soup! That's amazing! Btw, I keep worrying about your post saying how you have to decide what you're going to do about blogging...ok, I can deal if you let one or two of your blogs go, but I hope you keep at least one, I would miss you so much if you stopped altogether!! :-)

  4. Oh it is so the time of year for soups! I cook with soups... but not sure how to make them?

    BTW the Campbells's Split Pea with bacon is off the hook yummy! ;) Good choice!

  5. I make some really good soups. One is my clean out the freezer soup. I cook beef... steak, roast, etc. that needs to be used from the freezer, add veggies that need to be used from the freezer and make a wonderful soup. I cut up the beef, cook it until it falls apart, add a can of tomatoes, veggies from the freezer, potatoes, onions and cook until everything is done. This also freezes well so you can make a bunch and eat some later.

  6. I agree with you on good New England Clam Chowder. Lobster bisque is also good (like the chowder, you have to find a good one). Otherwise, I am not a huge soup eater.

  8. zyriana - Oh I'm so glad there's someone else who likes Campbell's split pea with bacon too - it looks horrible, but it is tasty!

    Mac - I like your idea except right now I have stuff in my freezer like fish sticks and old waffles...not so good for soup...but I'll definitely keep that idea in mind when I have better leftovers! :-D

    Anne: Oh I do LOVE Lobster bisque too! In fact I just saw some grocery-store "fresh" made while I was online at the deli, but I was afraid it would be disappointing, so I didn't get it...

    John - I can only assume you've never made Campbell's soup before? It's always the same "recipe" no matter which of the red and white can type you buy - yes, you add 1 can of water. It looks a LOT better after you add the water! :-P

  9. We love soup also and I've found that adding my own ingredients to a canned soup makes all the difference in the world with taste. My favorite is adding diced up zucchini, onion, and garlic to Progresso Chicken Noodle soup (I also add more chicken broth along with additional chicken from leftovers).
    Soups are easy and satisfying, especially when the air gets cold.

  10. I love soup and have been making new ones lately. I have a new soup that I have been making lately and will be making again this week. Here is the recipe.

    Chicken and White Bean Soup
    3 Tablespoons of minced dried onions

    4 celery stalks, finally chopped

    3 carrots, peeled and finally chopped

    1 Tablespoon minced garlic

    ½ teaspoon kosher salt

    1 teaspoon black pepper

    2 pounds cooked chicken breast, cut into bite size pieces (about 4 cups)

    2 Tablespoons butter

    44 ounces of chicken broth

    2 cubes of chicken bouillon

    1 14.5 ounce can white beans, drained and rinsed

    1 14.5 ounce can diced tomatoes, drained

    1 teaspoon Tabasco sauce



    Place the vegetables, garlic, salt and pepper in the slow cooker crock. Top with the chicken pieces, butter, broth and bouillon. Do NOT stir.



    Cover and cook on high for 4 hours. Stir in drained tomatoes and beans; continue cooking for another hour more. Before serving stir in Tabasco sauce.

    This makes 6 servings at 13 carbs each.
