Anyone Have a Good Potluck-Type Recipe?

DH informed me yesterday that this Wednesday we are hosting a meeting at our house with a potluck beforehand.  Of course I have my old standby potluck recipes, but I would consider trying something new, if any of you would like to share your tried-and-true "potluck pleasers" with me? The potluck is at my house, so it doesn't have to actually "travel", so that's not a concern. Also, of course I never know what the other people are going to bring, so it should be a good "main dish" in case they mostly bring "sides" or desserts.

Thanks for any and all suggestions! I can't say that I love to cook, but between the cooler fall weather, and just having seen Julie & Julia (see my post about that here), I am in the mood to cook and try something new.

  1. Meatballlsssss my mom makes them and makes a killer grape jelly and ketchup sauce. I kow it sounds gross... but it is SO yummy.

  2. I'm totally posting my whole favorite pot luck recipe here - LOL. I love it because it's fancy-ish presentation-wise, and EASY. Spinach Artichoke Dip in a bread bowl.

    1 8 oz package cream cheese
    1/4 cup grated Parmesan cheese
    1/4 cup grated Romano cheese
    1 clove minced garlic
    Salt and pepper to taste
    1 14 oz can artichoke hearts
    1 cup fresh chopped spinach
    1/4 cup shredded mozzarella cheese

    Chop and/or shred everything, and toss it in a pot on low heat for a half hour (or until you decide it is gooey and delicious), or bake at 350° for 30 minutes, or better yet - toss it in a crockpot on low heat and for a half a day.

    Get a big fancy round loaf from the bakery and cut it out like a bowl. Put the dip inside, garnish with a few spinach leaves, and cut the taken-out pieces of bread into cubes. Place it all on a platter with the bread cubes on the sides of the bread bowl. Or you can skip the bread bowl and serve it with tortilla chips.

  3. Three Cheese Spaghetti Bake (easy to make in advance and bake later)

    1 16 oz pkg spaghetti
    2 C shredded mozzarella cheese, divided
    3/4 C grated parmesan cheese
    1/2 C grated romano cheese
    3 eggs, beaten
    1 T olive or veg oil
    2 t garlic powder
    salt and pepper to taste
    1 28 oz jar spaghetti sauce

    Cook spaghetti per package instructions. Drain. Add 1 C mozzarella cheese, parmesan and romano cheese, eggs, garlic powder, salt and pepper. Press into a greased 13 X 9 inch baking dish. Top with spaghetti sauce. Cover and bake at 350 degrees for 20 minutes. Uncover; sprinkle with the remaining mozzarella cheese and bake 10 minutes longer or until heated through and cheese is melted.

  4. Hey, thanks for stopping by my blog! I just hosted a potluck and had a few dishes I cooked b/c I didn't want one main. I called my mom beforehand and some ideas she gave me were a big pot of meatballs in a crockpot and chicken wings which you could also keep warm in the crockpot, if need be, with some BBQ sauce. I had somebody bring a crockpot of a chicken chili which was delish!

  5. This is one I have made many times. I copied it off my site, so I hope the formatting isn't all messed-up. Hope you like it.

    What you'll need:

    * 4 chicken breasts, cut into small pieces
    * 1 cup of uncooked rice
    * 1 sliced white or yellow onion
    * 6-7 sliced mushrooms
    * 5-6 cloves of garlic, sliced not crushed
    * 1 can of Cream of Mushroom soup
    * 1 can of Cream of Celery soup
    * 1 can Chicken with Rice soup
    * 1 packet of Lipton's Onion Soup Mix
    * 1 stick of unsalted butter, cut into small pieces

    First, coat a 13 x 9 x 2 inch pan well with butter.

    Spread evenly in the following order:

    * 1 cup of uncooked rice
    * 1/2 cup of the unsalted butter, cut into small pieces
    * the chicken breasts
    * 1 sliced onion
    * the mushrooms
    * the garlic

    In a separate bowl mix 1 can of the following

    * Cream of Mushroom Soup
    * Cream of Celery Soup
    * Chicken with Rice Soup

    Add 1 and 1/2 cups of water to the soups and mix thoroughly. Pour evenly over the chicken to cover the entire dish. Add 1 packet of Lipton's Onion Soup Mix.

    Cover with foil and cook at 325 degrees for 2 and 1/2 hours. (or 2 hours at 350)

    Serve with Parmesan cheese

  7. Well, you know my potluck dish is Baked Spaghetti. I know you have the recipe, so I assume you're not considering it for your Potluck dinner. However, because I think i'ts such a great recipe, I'm going to post it for everyone else because it's delicious!

    Baked Spaghetti
    1 lb. Thin Spaghetti (No. 9)
    1 can Tomato Soup
    1 can water
    1 6 oz. can tomato paste
    16 oz. extra sharp cheddar cheese
    pepper
    3-4 tbs. butter
    8-12 crumbled Ritz crackers

    Butter a 9x13 baking dish. Cut 12 slices of cheese to lay on top of casserole and put aside. Cube remaining cheese. Combine tomato soup, tomato paste, tomato soup can full of water, cheese, and a generous amount of pepper in a medium saucepan and heat, stirring occasionally until cheese is melted. Meanwhile, cook spaghetti according to package directions and drain. Mix spaghetti into sauce and combine well, ensuring all strands are well-coated. Pour into baking dish and place cheese slices on top (I space them so that there are 12 servings and each serving gets a slice of cheese). Sprinkle cracker crumbs on top and top with butter slices. Bake at 350 degrees for 30 minutes.

  8. I went to a potluck last night(didn't have to bring anything because I was a guest), and the most popular dish there was Pretzel Salad. It was delicious!

    A lot of the recipes on the internet call for strawberries, but the lady used raspberries and raspberry jello, and I thought it was the best! Here's a link to the recipe:

  9. I make chili the night before but I can't give you the recipe because it's different every time! I HAVE to work on that and try to share it.

  11. You could try a dessert and have everyone kiss your feet at the end of the Potluck meal. I just posted my recipe for Bavarian Cream Filled Eclairs. I make them every year for my church.
