My First Homemade Christmas Dinner!

We always used to travel to someone's house for Christmas, until a couple of years ago.  Then we started spending Christmas at home, just the three of us.  Which is fine because it eliminates any drama, hurt feelings, or wondering where we are going to go for the holiday.  Much simpler this way.

We used to just have appetizers and whatnot all day, which was great.  But for some reason, this year I had the urge to make a roast beef dinner.

I have a really good recipe using and eye round roast.  It uses bacon.

Look!  I didn't overcook it!  It was a Christmas miracle!  And there was bacon.

I even successfully made homemade gravy.  I made (homemade) mashed potatoes and "wheels" (fresh carrots cut into circles - it's time consuming but it tastes better because it's made with love).  (We only had to wear a holter for 24 hours afterwards to make sure our hearts kept beating after all that red meat and bacon, ha ha!!)

  1. We went to my sister-in-law's and had a home cooked meal: roast beef, ham, mashed potatoes with corn, carrots and Christmas cookies! I even splurged and had Pepsi to drink! Your roast looks very good!

Karen - I'm like you - a "real" soda is a splurge for me too, but every once in a long time, isn't a soda good?? :-) I was originally going to make ham, but our daughter informed us she hates ham. Which was news to us. So that's what made me go to my second choice of roast beef. I like ham though! Ham AND roast beef - best of both worlds! :-)
